Description

Chitin is a type of Glycosaminoglycan that is the animal equivalent to Cellulose - it performs the same function in the animal world as does Cellulose in the plant world - i.e. it provides tissue protection and resistance.  Chitin is the most prevalent Polysaccharide after Cellulose.  Chemically, Chitin has a crystalline structure and forms a network of organized fibers that impart rigidity and resistance to other substances that contain it.  It is composed of linked units of the N-Acetyl Glucosamine (NAG) form of Glucosamine.
