Description

Nitrosamines are a toxic group of Amines.  They are organic oxides of Nitrogen that are formed within the body when Nitrites and Nitrates react with Amino Acids.

Toxic Effects of Nitrosamines

Immune System

Nitrosamines are extremely potent carcinogens which can cause Cancer in any part of the body including:  [1]

 Esophagus Cancer  [2]

 Gliomas  [3]

 Larynx Cancer  [4]

 Liver Cancer

 Lung Cancer

 Mouth Cancer

 Stomach Cancer  [5]

Metabolism

 Nitrosamines may cause Liver damage.

These Foods Contribute to the Formation of Nitrosamines

These Foods contribute to Nitrosamine formation due to their Nitrate or Nitrite content.

These Substances Cause the Formation of Nitrosamines within the Body

Food Preservatives

Nitrates are converted in the Stomach to Nitrosamines.

Nitrites are converted in the Stomach to Nitrosamines.

Recreational Drugs

The Nitrate ions generated by Amyl Nitrate (inhalation) may increase the body's production of Nitrosamines.

These Substances may Counteract Nitrosamines

Amino Acids

Alpha-Ketoglutarate (AKG) may inhibit the ability of Nitrosamines to cause Liver Cancer.  [6]

Thioproline may prevent the conversion of dietary Nitrites to Nitrosamines.

Carbohydrates

Nitrosamines are excreted from the body as conjugates with Glucuronic Acid - these conjugates are known as Glucuronides and this process is known as glucuronidation.

Enzymes

Nitrate Reductase detoxifies Nitrates, preventing their conversion to Nitrosamines.
