Description

Miso is a fermented Soybean Product manufactured commercially by inoculating trays of Rice with the beneficial mould - Aspergillus oryzae - and adding the resulting mixture to a ground preparation of cooked Soybeans, Water and Salt.  This mixture is allowed to ferment for several days and is then ground into a paste.  Miso is a more easily-digestible product compared with unprocessed Soybeans as the fermentation process used in the manufacture of Miso converts the Protease Inhibitors that are naturally present in Soybeans into an inert substance.
