Garlic Oil is manufactured through the steam distillation of Garlic. 

Manufacturing Process for Garlic Oil

 Crushed or raw Garlic is submerged in water, which is then heated to distilling temperatures.  Through the resulting distillation the water and oil are separated and the Oil is collected for processing.

 When the cloves of Garlic are crushed during the manufacturing process, the Alliin in the cloves converts to Allicin - this Allicin then decomposes at the high temperatures used during distillation.  These Allicin decomposition products (the disulfides) are the primary components of Garlic Oil.
