Overview

Caiapo is an extract from a variety of Sweet Potato (the White Sweet Potato).  Its flesh and skin are white.  It is cultivated in the mountains of Prefecture, Japan.  It is not generally used as a culinary item but is used for its therapeutic properties.

 Ipomoea batatas - caiapo

 The Caiapo Sweet Potato is from the Morning Glory (Convolvulaceae) family.
