Unsaturated Fatty Acids
Description
Unsaturated Fatty Acids are Fatty Acids that contain one to six double bonds between the carbon atoms in their chain. The double bond(s) present in UFAs produce a slight negative charge because it has a pair of extra electrons. Since like charges repel each other, UFA chains repel one another and tend to spread out over surfaces (disperse). The more double bonds there are, the greater their tendency is to disperse.
