Olestra is an artificial Fat-substitute.
Olestra “works” because it is such a large molecule (comprised of at least four Fatty Acid molecules bound to Sucrose Polyester) that it cannot be absorbed or metabolized by the Enzymes and Bacteria of the Digestive System.
