Sulfuric Compounds
When the plant tissues of foods containing Glucosilinates are disrupted (by chewing or cooking) the Thioglucosidase enzyme (found in the tissues of Glucosilinate-containing plants) hydrolyzes Glucosilinates to form the various categories of breakdown products of Glucosilinates (e.g. Dithiolthiones, Isothiocyanates, etc.).
